PHOENIX -- You can't go wrong with bacon. But have you ever tried it in guacamole or on a peanut-butter-and-jelly sandwich? How about bacon-wrapped onion rings?
Local salt and bacon guru Aaron Eckburg of go lb. salt showed 3TV Heidi Goitia how to spice up ordinary dishes with flavorful bacon and shared his recipe for Bacon Guacamole.
1 8-oz pkg Bring Home The Bacon
3 Tbsp. cilantro
1/4 red onion
2 tsp. Sriracha (optional)
Slice bacon into 1/4-inch strips or cubes and fry to desired doneness.
Halve avocados, remove pits and slice in the skin across the avocado in both directions into 1/4-inch pieces, and then scoop avocado out of skins into a bowl.
Dice red onion into 1/8-inch pieces. Add to bowl.
Chop cilantro. Add to bowl.
Halve lime and squeeze juice over avocado, onion and cilantro.
Add bacon and mix all together. If you want to add a bit of heat, add 1-3 teaspoons of Sriracha and mix all together.
Serve with corn chips or use instead of mayo on your next BLT.
