Seared Big Eye Tuna

Soy Ginger Sauce
1/2 cup soy sauce
1/2 cup rice wine vinegar
1 Tbsp. fresh ginger
1 oz. pineapple juice

Peel and mince ginger, measure and mix all ingredients together.

Beer Mustard Sauce
1/2 oz. dry mustard
1/3 cup Dijon mustard
3 oz. beer
1/4 cup soy sauce

Measure and mix all ingredients together.

Asian Slaw
1 carrot
1 Daikon radish
1/3 red onion
5 sugar snap peas

Peel, julienne, and mix all the vegetables together.

Seared Tuna
10-oz. portion of Big Eye Tuna
1 oz blackening spice
2 oz. olive oil
3 oz. black sesame seeds
3 oz. wasabi, pickled ginger and green onions for garnish
