PHOENIX -- If you're looking for the perfect English dessert to enjoy during your royal wedding viewing party (whether is a party of one or many), look no further than Honey Moon Sweets.
Joan O'Conner showed Kaley O'Kelley and Tara Hitchcock (3TV's resident royal wedding superfan) how to make a decadent Berry Trifle. She also showed off some other lovely English desserts you might want to try, including scones, tarts and homemade lemon curd.
O'Conner says this is the absolutely traditional version of the delicious and easy-to-make dessert that graces the Sunday lunch table of many a British family across the country. You could call it an "adult" trifle, as it is made with sherry, which makes it totally irresistible. It’s a “can't go wrong” recipe.
1 9- or 10-inch pre-baked yellow cake sliced into 3 rounds or cut in large cubes (any cake mix is fine)
2 cups traditional vanilla pastry cream or custard made with vanilla pudding mix
1/2 pint heavy whipping cream
1 package frozen raspberries or 2 1/2 pints of fresh raspberries
1/2 cup of strawberry jam
1 cup cream sherry
1 cup sliced almonds, toasted
Slice the cake into rounds and spread each slice with a little strawberry jam.
Layer in a glass dish, leaving no significant gaps.
Pour sherry all over to soak sponge.
Spread raspberries evenly over sponge right to the edge.
Take your chilled custard, pour and spread all the way to the edge of the bowl.
Allow to cool in fridge.
When set, whip cream and layer on top of custard.
Chill for at least half an hour.
Toast the almonds and scatter over the top.
Depending on how large your bowl is and how many guests you're serving, you can create multiple layers, using other berries or peaches for color and flavor. You can slice strawberries and line them up around the inside of the bowl for a decorative effect. Have fun decorating the top with whipped cream swirls! Most of all, enjoy.
