Recipe: Tortellini D'Angelo

Tortellini D'Angelo

-2 tbsp. olive oil (enough to coat bottom of pan)
-6 oz. of chopped chicken
-1/4 of small onion finely diced
-1/4 tsp. of each:
---Dry Basil
-Handfull of sliced mushrooms
-1/4 cup of Marsala wine
-1/2 cup of pureed tomatoes
-1/4 cup of heavy cream
-1 tbsp. butter
-8 oz. of cooked cheese tortellini

Grated Parmigiano Cheese

-Sauté olive oil, chicken and onions. Add seasoning. Let the seasonings cook in and around your chicken, then add your mushroom and cook until chicken is almost done. Add the Marsala wine to deglaze the bottom of pan. Add your tomato puree, stir, and then add your cream and butter. Let sauce simmer and reduce down. Take your cooked tortellini and add to pan, sprinkle with Parmigiano cheese, and toss all together.
