PHOENIX -- Just in time for the first night of Hanukkah, Neal Borenstein of Chompie's shares his recipe for Sweet Potato Latkes.
2 medium sweet potatoes, grated
1/4 cup green onions finely chopped
Salt & pepper to taste
1 tablespoon brown sugar
1/2 teaspoon baking powder
1/2 cup matzoh meal
1/4 cup of oil
In a large mixing bowl, combine ingredients -- except the cooking -- oil and mix well by hand.
Using a large spoon, portion out the batter and place into a heated skillet pan containing the cooking oil.
Cook each side of the potato pancakes until golden brown.
