Mother's Day idea: Blueberry Brioche French Toast with Caramelized Banana, Nutmeg Cream & Blueberry Coulis

French Toast Ingredients
6 eggs
1/2 tsp. ground cinnamon
1 tsp. vanilla extract
1/4 cup milk
1 tsp. sugar
2 slices blueberry brioche*

Instructions
Mix together batter ingredients (first 5 ingredients). Dip brioche slices into batter and then place onto a well-greased,
non-stick skillet, cooking until golden brown on both sides.

Cut each slice into two triangle shapes and reserve.

* If you prefer, you can substitute your favorite brioche or “Texas-style” thick bread.

Nutmeg Cream Ingredients
1 pint heavy cream
Freshly grated nutmeg (to taste)
Sugar (to taste)

Instructions
Bring cream to a rolling boil which still start the reduction process. Add freshly grated nutmeg to the cream using a micro-grater. Add sugar to sweeten cream.

Let mixture reduce until it coats the back of your mixing spoon. Remove from heat and reserve.

Blueberry Coulis Ingredients
1 pint fresh blueberries
1/4 cup simple syrup

Instructions
Using a high-speed blender, mix fresh blueberries and simple syrup until viscous.
Note: Simple syrup is a mixture of 50 percent sugar and 50 percent water
