RECIPE: BBQ Chicken Salad

BBQ Chicken Salad
Chef Justin Poole, Sunfare

Component 1: BBQ Chicken
Ingredients:
Chicken
1 pinch Onion Powder
2 oz. BBQ Sauce (divided)

Method:

Season the chicken with salt, pepper and onion powder
Brush with BBQ sauce and grill until cooked through
Cut into small cubes and add more BBQ sauce to coat

Component 2: Salad

70/30 salad mix
Jicama (diced)
Black beans
Green Onion (chopped)
Tomato (diced)
Corn

Place the salad mix on a container.
Align ingredients in straight lines on top of the salad mix.
Serve with a side of BBQ sauce and ranch.
