Pork Carnitas & Salsa

Pork Carnitas

2 pork collars cut into 2” pieces and
spread out in a 2” deep full-size pan.

 2 Tbsp Salt
1 tsp Cumin
1 tsp Canela
combine and sprinkle over all the pork

1/2 cup milk
1/2 cup o.j.
1/2 cup Coke
1/2 cup lard
combine and pour over the pork

Bake at 300 for 3 to 4 hours until tender


#2 Chipotle Salsa

6 Tomatoes

5 chipotles en adobo

1 tsp black pepper

2 tsp salt

1 1/2 cups water

8  garlic cloves toasted


Simmer for 10 minutes then blend
