Donna's Recipe for Red Velvet Sweetie Pies
Preheat oven to 325 degrees convection, 350 degrees conventional. Grease pans.
Place the following ingredients in the bowl of an electric mixer and blend on medium speed for 2 minutes until completely blended:
1 ½ cups canola oil
½ cup buttermilk
½ cup sour cream or greek yogurt
1 tsp apple cider vinegar
1 bottle (1 ounce) red food coloring
1 teaspoon vanilla extract
In a separate bowl sift the following dry ingredients together until well combined:
2 ½ cups unbleached flour
1 ½ cups granulated sugar
1 teaspoon baking soda
1 teaspoon salt
1 teaspoon cocoa powder
Add the dry ingredients to the wet ingredients and blend on medium for 2 to 3 minutes until well blended.
Divide batter by ¼ cup increments into prepared heart shaped cookie tins, smooth batter with bottom of teaspoon (dip in water to prevent sticking).
Bake for 6 to 7 minutes convection, 7 - 10 minutes conventional oven.
Marshmallow Fluff Frosting
½ cup butter, softened
½ cup shortening
2 cups marshmallow crème
Combine above ingredients in bowl of electric mixer and blend on medium speed until completely combined. Add powdered sugar, 2 teaspoons vanilla, add 1 to 2 Tablespoons milk.
Mix on medium-high speed until completely combined.
Pipe between 2 sweetie pies, dust top with powdered sugar.
