Easy paninis

Ham & Brie Panini

Ingredients:
1 crispy French baguette
1 lb. thinly sliced Black Forest ham
1 lb. brie cheese
8 oz. arugula
1/2 cup homemade or favorite variety of applesauce
1/2 lb. room-temperature butter


Salami and Provolone Panini
 
Ingredients:
1 crispy French baguette
1/2 lb. very thinly sliced sopressetta
1/2 thinly sliced provolone
1/2 cup olive tapenade (1/2 cup pitted olives pureed with extra virgin olive oil)
1/2 lb. room-temperature butter


Tomato, Eggplant and Mozzarella Panini
 
Ingredients:
1 crispy French baguette
1/2 lb. Roma tomatoes
1 lb. fresh mozzarella
3 eggplant, cut into 8-inch rounds and lightly seared in extra virgin olive oil
1/2 lb. room temperature butter

Instructions (same for all):

Slice baguettes into 1/2-inch slices on the bias. For each sandwich use two slices of the baguette, and butter one side of the baguette. Layer all ingredients on one half. Top with the other slice of the baguette and place in the George Foreman grill. Depending on the size and number of panini this will be approximately 2-1/2 to 3 minutes.
